Spicy Oca and Leafy Stew recipe

Oca is a delicious and refreshing tuber which can be eaten raw, roasted or simmered in stews. Make this tasty spicy oca and leafy stew recipe as a one-pot dish and serve on its own, with rice or chunky bread. The only fresh ingredients needed are onion, kale or cabbage, ginger and oca.

Serves 2-3

Ingredients

  • Olive oil or coconut oil 1 tbsp
  • Ocas 400g, inch pieces
  • Onion 1 large, finely chopped
  • Cumin seeds 1 tsp
  • Ginger 2 tbsp, fresh peeled and minced 
  • Garlic 2 cloves, crushed
  • Tin tomatoes 1
  • Passata 20ml or tomato puree 1 tbsp
  • Cayenne chilli powder 1/2 tsp
  • Cinnamon 1/2 tsp
  • Sea salt 1 tsp
  • Turmeric 1 tsp
  • Kale or Spring Greens 1 bunch, stalks removed, chopped into strips
  • Peanut butter 2 tbsp
  • Black pepper, to taste
  • Coriander leaves, for garnish

Method

Step 1

Heat the oil in a large pan and fry the onions until softened.

Step 2

Add the cumin seeds and ocas. Stir well to coat and simmer covered for a few minutes.

Step 3

Add the remaining ingredients except for the leafy vegetable and peanut butter. Also add 500ml water. Bring to the boil and simmer covered for 10 minutes.

Step 4

In a bowl, mix the peanut butter with some of the stew liquid until blended. Add this to the stew and simmer for a final 10 minutes.

Step 5

Make this spicy oca and leafy stew recipe served on its own, with rice or chunky bread. Garnish with coriander leaves.
