Oca is a delicious and refreshing tuber which can be eaten raw, roasted or simmered in stews. Make this tasty spicy oca and leafy stew recipe as a one-pot dish and serve on its own, with rice or chunky bread. The only fresh ingredients needed are onion, kale or cabbage, ginger and oca.

Ingredients
- Olive oil or coconut oil 1 tbsp
- Ocas 400g, inch pieces
- Onion 1 large, finely chopped
- Cumin seeds 1 tsp
- Ginger 2 tbsp, fresh peeled and minced
- Garlic 2 cloves, crushed
- Tin tomatoes 1
- Passata 20ml or tomato puree 1 tbsp
- Cayenne chilli powder 1/2 tsp
- Cinnamon 1/2 tsp
- Sea salt 1 tsp
- Turmeric 1 tsp
- Kale or Spring Greens 1 bunch, stalks removed, chopped into strips
- Peanut butter 2 tbsp
- Black pepper, to taste
- Coriander leaves, for garnish
Method
Step 1
Heat the oil in a large pan and fry the onions until softened.
Step 2
Add the cumin seeds and ocas. Stir well to coat and simmer covered for a few minutes.
Step 3
Add the remaining ingredients except for the leafy vegetable and peanut butter. Also add 500ml water. Bring to the boil and simmer covered for 10 minutes.
Step 4
In a bowl, mix the peanut butter with some of the stew liquid until blended. Add this to the stew and simmer for a final 10 minutes.
Step 5
