This smoked salmon, onion and tomato pasta recipe makes a tasty and easy mid-week meal. Sweet and creamy, it doesn’t need any salt adding as the smoked salmon should provide all the saltiness you need. The only fresh ingredient needed is an onion.

Ingredients
- Olive oil
- Onion 1, peeled and chopped
- Garlic 1 clove, crushed
- Tin tomatoes 1
- Cream cheese 70g
- Smoked salmon fillet 1, flaked
- Pasta 225g
- Basil 1 tbsp dried or 2 tbsp fresh
- Parmesan, grated (to garnish)
- Ground black pepper
Method
Step 1
Heat the olive oil in a large frying pan and sauté the onion and garlic for 5 minutes until the onion has softened.
Step 2
Meanwhile, bring the pasta to the boil in a saucepan of water and then simmer.
Step 3
Add the tomatoes to the onions and bring to the boil. Stir in the cream cheese, smoked salmon, ground black pepper and basil. Simmer gently until the pasta is cooked.
Step 4
