Did you know that ground walnuts combined with spices make for a nutritious alternative to meat? The crumbly texture resembles minced meat but it doesn’t require any cooking. This walnut meat can be added to salads or used as a filling in lettuce or tortilla wraps. This raw walnut meat lettuce tacos recipe provides a filling, protein-rich alternative to meat and is delicious when served as an easy starter or lunch.
Makes 4 starters or lunches
Ingredients
For the walnut meat:
- Walnuts 225g, ground until crumbly
- Cumin ground 1½ tbsp
- Coriander ground 1 tbsp
- Paprika dash
- Garlic powder dash
- Ground black pepper dash
- Soy sauce 1 tbsp
- Balsamic vinegar 2 tbsp
To serve:
- Large lettuce leaves
- Cherry or plum tomatoes, chopped
- Avocados/cucumber/sweet peppers, chopped
- Parsley, dried
- Lime juice
- Salt and ground black pepper
Method
Step 1
Pulse the walnuts in a grinder or food processor until crumbly. Don’t overdo it or else it will turn to a paste as the oils are released.
Step 2
Stir all the walnut meat ingredients into the walnuts. Put it aside (or you can store it in the fridge for later).
Step 3
Meanwhile, wash and drain the lettuce leaves. Chop the tomatoes and whichever other vegetable you are using – choose from avocados, cucumbers or sweet peppers.
Step 4
Spoon the walnut meat over the lettuce leaves. Add the chopped vegetables, dried parsley, lime juice, salt and black pepper.
Step 5
Serve these raw walnut meat tacos as a starter or light lunch. You could also add the walnut meat to larger salads for a more substantial meal.
