Marrow, Potato and Sage Soup recipe

Easy and nutritious one-pot dish. No need to add cream as it’s a lovely consistency without it. The sage really lifts this flavourful marrow, potato and sage soup recipe, so make sure you use bread for cleaning your bowl afterwards. The only fresh ingredients are marrow or courgette, potato and onion.

Serves 4

Ingredients

  • Onion 1 medium, chopped
  • Garlic clove 1, chopped
  • Butter or Plant butter 20g
  • Olive oil 20ml
  • Marrow 750g-1kg, peeled and chopped into bite-sized pieces
  • Potato 250g-350g, peeled and diced
  • Fresh sage leaves a few
  • Sugar 2 tsp
  • Vegetable stock 1 litre
  • Parsley or Sage leaves, dried or fresh, chopped, to garnish

Method

Step 1

In a large saucepan cook the onion and garlic in the oil and butter until softened, without browning.

Step 2

Add the marrow, potato and sage leaves. Stir and coat in the buttery oil, cover with a lid and sweat over a low heat for 10 minutes, stirring occasionally. 

Step 3

Add the sugar and stock, then bring to the boil.

Step 4

Simmer for 20 minutes until the vegetables are tender. Cool slightly, remove the sage leaves and discard, and then liquidise the soup in batches. Season to taste.

Step 5

At this point you can either freeze the soup, or reheat if necessary and serve warm with crusty bread. Make this marrow, potato and sage soup recipe, and garnish with chopped parsley or sage leaves.

TIP: Always season soup near the end, because the taste may change as the food cooks. You can always add seasoning, but you cannot take it away.
