The saltiness of the halloumi and the sweetness of the onions and tomatoes make this pasta dish effortlessly tasty. This halloumi, onion and tomato pasta recipe has few ingredients, most of which you may have in your kitchen cupboard. The only fresh ingredient needed is onion. I love this dish!

- Olive oil 1 tbsp
- Onion medium 1 (red or white), peeled and thinly sliced
- Garlic clove 1, crushed
- Halloumi 250g packet, chopped bite-sized
- Tomatoes 1 tin, chopped
- Basil 1 tsp dried or 1 tbsp, chopped
- Pasta 225g
Method
Step 1
Heat the oil in a frying pan and fry the halloumi pieces until brown on both sides. Remove the halloumi from the pan.
Step 2
Now pour enough boiling water to cover the pasta into a saucepan and start cooking according to the pasta instructions. Meanwhile, add a little more oil to the frying pan and fry the onion slices for several minutes until they soften and colour.
Step 3
Add the garlic and cook on a gentle heat for a few minutes. Then stir in the tomatoes and basil. Add the halloumi pieces back to the frying pan.
Step 4
Keep cooking on a low heat until the pasta is ready. Drain the pasta and share between two bowls. Spoon the halloumi mixture on top and serve.
TIP: Halloumi is already salty so you shouldn’t need to add salt to any halloumi recipe.
