Salty fish, fresh beans and fruity mango combine wonderfully in this delicious and easy fish curry. Most of the ingredients can be found on the spice rack. A one-pot dish served with rice or pitta bread. The only fresh ingredients needed are French beans, onion, mango and ginger.

- Olive oil or Coconut oil 1 tbsp
- Cumin 1 tsp seeds or 1/2 tsp ground
- Black mustard seeds 1 tsp
- Fresh ginger 1 tbsp fresh, finely chopped
- Onion 1 large, peeled and sliced into medium wedges
- Garlic cloves 3, crushed
- Chilli 1, finely chopped
- Turmeric 1/4 tsp
- Garam masala 1/2 tsp
- Coriander ground, 1 tsp
- Coconut milk 1 tin
- White fish fillets (such as cod or pollock)
- French beans, 100g, trimmed and halved
- Mango 1, cut into thin slices
- Coriander, handful fresh or dried 1 tbsp
- Lime juice, good squirt
- Salt and pepper, to taste
Method
Step 1
Heat the oil in a large pan and add the cumin seeds. Once starting to sizzle, add the onions, garlic and ginger and fry for 1 minute. Add the mustard seeds and fry for a few more minutes.
Step 2
Stir in the chilli, ground coriander, garam masala and turmeric, frying for another minute. Add the coconut milk and French beans, then put the lid on the pan.
Step 3
Once it starts bubbling, reduce to a simmer for 5 minutes. Add the fish (either frozen or fresh), turning them so they have been coated in the liquid. Replace the lid and leave to simmer for another 10 minutes until the fish starts to break apart easily.
Step 4
Stir in the lime juice and coriander. Season well to taste. Carefully spread the mango slices over the top of the mixture and replace the lid to gently warm the mango. 5 minutes later, it is ready to serve.
Step 5
Make this fish, French bean and mango curry recipe and serve with rice (basmati works well), together with pitta or naan bread.
TIP: If you have a thermal cooker with a top pot, follow up to and including step 2, but also place the fish in the top pot. Leave it all to cook in the sealed thermal cooker for 60-90 minutes. Towards the end, place the mango slices in the top pot to warm through.
