This cucumber and mint tzatziki recipe is fresh-tasting and quick, plus it uses up a glut of cucumbers. The only fresh ingredient needed is cucumber because you can use dried garlic and mint instead of fresh.
Ingredients
- Cucumber 1 large or 2-3 small, peeled and coarsely grated
- Yoghurt 200ml
- Garlic, 1 clove crushed or 1/4 tsp dried
- Mint handful fresh chopped or 1 tbsp dried
- Salt and pepper to taste
Method
Step 1
Cover the grated cucumber with a pinch of salt and then hand-squeeze all the water out of it in batches.
Step 2
In another bowl, mix together the cucumber, garlic, mint and yoghurt. Add salt and pepper to taste. Add more garlic (sparingly) or mint if you wish.
Step 3
Store in a lidded container in the fridge where it will keep for several days. Make this cucumber and mint tzatziki recipe and serve it with curries, salads, toasties, etc.
TIP: Stir the tzatziki before serving as residual water can collect on the surface. This is normal and nothing to worry about.
