Courgette and Carrot Summer Pasta recipe

For a quick and tasty light mid-week meal, make this courgette and carrot summer pasta recipe. The only fresh ingredients needed are courgette, carrot and onion.

Serves 2

Ingredients

  • Courgette, chopped
  • Oil 1 tbsp
  • Chilli 1 small dried or fresh, finely chopped
  • Onion 1 small, peeled and finely chopped
  • Carrot 1, peeled and finely chopped
  • Cream cheese, 3 tbsp
  • Mint 1 tbsp dried or 2 tbsp fresh
  • Salt and pepper, to taste

To garnish:

  • Cheese, grated

Method

Step 1

Heat the oil in a frying pan and add the courgette, carrot and onion until softened.

Step 2

Meanwhile, bring the pasta to the boil in a saucepan of water and then simmer.

Step 3

Add the chilli and fry for 1 minute.

Step 4

Stir in the cream cheese and mint. Simmer gently until the pasta is cooked. Drain the pasta and stir in the courgette mixture. Season according to taste.

Step 5

Make this courgette and carrot summer pasta recipe served topped with grated cheese. If you like, decorate with a washed, edible flower such as a chrysanthemum or calendula (the petals can be eaten).
