Celery Soup with Braised Celery recipe

Ingredients

  • Butter or Plant butter 2 tbsp
  • Oil 1 tbsp
  • Onion 1 large, chopped
  • Celery 1 whole bunch, chopped
  • Garlic cloves 2, crushed
  • Vegetable stock 1 litre
  • Potatoes 2-3, peeled and chopped
  • Bay leaves 2
  • Fennel 1/2 tsp
  • Balsamic vinegar 1/2 tbsp
  • Salt and pepper

Method

Step 1

Melt the oil and butter in a large pan. Add the onion and the celery minus 1 stick. Cook until softened.

Step 2

Add the garlic and cook for another minute.

Step 3

Add the potatoes, stock and bay leaves. Bring to the boil and then cover and simmer for 15 minutes.

Step 4

Meanwhile, melt 1 tbsp of butter in a small pan. Add a ladle of the soup liquid and the final stick of chopped celery. Cook on low.

Step 5

Remove the soup from the heat and put into a blender. Blend until smooth. Return to the large pan.

Step 6

Stir the braised celery, fennel and balsamic vinegar into the soup. Season to taste. Make this celery soup with braised celery recipe, serve it with crusty bread and simply enjoy!
