Serves 2

Ingredients

  • Olive oil, 2 tbsp
  • Walnuts 90g, lightly toasted and roughly chopped
  • Pasta 225g
  • Cauliflower 1/2 large or 1 small, chopped into small florets
  • Red onion 1 medium, thinly sliced
  • Chilli flakes, pinch
  • Garlic clove 1, crushed (or 1/4tsp garlic powder)
  • Lemon 1/2, juice
  • White wine vinegar 1 tbsp
  • Salt and pepper
  • Feta or any tangy cheese, cubed (optional)

Method

Step 1

Toast the walnuts in a dry frying pan until lightly toasted. Remove from the heat and allow to cool.

Step 2

Meanwhile, bring the pasta to the boil in a large saucepan. While the pasta is simmering, add the olive oil to a large frying pan and lightly fry the cauliflower. After a few minutes, add the salt, pepper and chilli flakes. Fry over a high heat until starting to soften and brown (the cauliflower should still be crunchy).

Step 3

Lower the heat, add the garlic and cook for 1 minute. Add the white wine vinegar, lemon juice and toasted walnuts. Season again with salt and pepper, according to taste.

Step 4

Drain the pasta and transfer to two bowls. Scatter the cauliflower mixture over the pasta, crumble over the cheese (if using) and serve.

Step 5

Enjoy this cauliflower, red onion and walnut pasta recipe on its own or with crusty bread.
