This cauliflower, red onion and walnut pasta recipe makes a refreshing and surprisingly filling dish. The only fresh ingredients needed are cauliflower and onion. The cheese is optional so it can also be vegan, plus it’s healthy and delicious.

Ingredients
- Olive oil, 2 tbsp
- Walnuts 90g, lightly toasted and roughly chopped
- Pasta 225g
- Cauliflower 1/2 large or 1 small, chopped into small florets
- Red onion 1 medium, thinly sliced
- Chilli flakes, pinch
- Garlic clove 1, crushed (or 1/4tsp garlic powder)
- Lemon 1/2, juice
- White wine vinegar 1 tbsp
- Salt and pepper
- Feta or any tangy cheese, cubed (optional)
Method
Step 1
Toast the walnuts in a dry frying pan until lightly toasted. Remove from the heat and allow to cool.
Step 2
Meanwhile, bring the pasta to the boil in a large saucepan. While the pasta is simmering, add the olive oil to a large frying pan and lightly fry the cauliflower. After a few minutes, add the salt, pepper and chilli flakes. Fry over a high heat until starting to soften and brown (the cauliflower should still be crunchy).
Step 3
Lower the heat, add the garlic and cook for 1 minute. Add the white wine vinegar, lemon juice and toasted walnuts. Season again with salt and pepper, according to taste.
Step 4
Drain the pasta and transfer to two bowls. Scatter the cauliflower mixture over the pasta, crumble over the cheese (if using) and serve.
