This fresh-tasting soup can be as sweet as you like it. Such a vibrant colour, this carrot, honey and orange soup recipe makes a surprisingly filling meal. A one-pot dish, the only fresh ingredients needed are carrots, orange and onion.

Ingredients
- Olive Oil 30ml
- Butter 30g
- Carrots 400g, peeled and chopped
- Garlic cloves 2, crushed
- Onion 1 large, chopped
- Vegetable stock 300ml
- Orange 1, juice and ½ zest
- Honey, to taste
- Salt and pepper, to taste
Method
Step 1
Melt the butter and oil in a large saucepan. Then add the onion and sauté until softened but not browned.
Step 2
Add the carrots and garlic. Leave to sweat with the lid on for about 10 minutes.
Step 3
Add the stock, orange juice and zest. Bring to the boil and then cover and simmer for 15 minutes.
Step 4
Remove from the heat. Add to a blender to create a thick and smooth soup.
Step 5
Return to the saucepan. Add plenty of salt and ground pepper. Initially stir in 1 tbsp of honey and taste. Keep adding honey until it’s sweet enough and then taste for seasoning, adjusting to your taste.
