These delicious carrot and cardamom snowballs provide an easy and nutritious sweet snack. Just blitz or grind the ingredients, roll into balls, and store in the freezer until you are ready to eat them. The only fresh ingredient needed is one small carrot.
Makes approximately 10 balls
Ingredients
- Carrot 1 small, grated
- Walnuts 80g
- Pitted dates 7
- Any dried fruit 15g
- Cinnamon pinch
- Seeds from cardamom pods 3
- Maple syrup 1 tsp
- Half a lemon, zest grated
- Coconut flakes
Method
Step 1
In a grinder or food processor, grind the walnuts into a powder. Transfer to a small mixing bowl.
Step 2
Add all the other ingredients to the grinder/food processor except the coconut flakes and mix well until a paste forms.
Step 3
Mix the paste into the ground walnuts until well combined.
Step 4
Scatter some coconut flakes onto a plate. Now take just over a teaspoon of the mixture and roll in the coconut flakes, forming a ball as you do so. Do the same with the rest of the mixture, making approximately ten coconut-coated balls.
Step 5
Place the carrot and cardamom snowballs in the freezer on a plate or in a container. No need to defrost, just lift out of the freezer, leave for a few minutes, and then bon appetit!
