Tasty, moist and colourful. Either buy a ready-made pizza base or make your own but be generous with the balsamic glaze. This beetroot, onion and feta pizza recipe makes the best pizza I have ever eaten. The only fresh ingredients needed are beetroot and onion.
Makes 2 medium-sized pizzas
Ingredients
- Tomato passata 4 tbsp
- Beetroot 1 large, cooked, peeled and thinly sliced
- Onion 1 medium (red or white), finely sliced
- Chilli 1 red, finely chopped
- Feta cheese 100g, crumbled
- Fennel herb 1 tbsp, finely chopped
- Lemon 1/2 rind and juice
- Pine nuts 20g
- Cheese, grated
- Balsamic glaze, good squirt
Method
Step 1
Make the pizza topping. In a bowl mix together the beetroot, onion, feta, lemon juice and rind, chilli and fennel. Season well.
Step 2
Spread the tomato passata over the pizza bases. Evenly spread the topping ingredients over the pizzas.
Step 3
Scatter the pine nuts and grated cheese over the pizzas. Finally, zig-zag a generous squirt of balsamic glaze over the tops.
Step 4
Cook in a preheated 220C /gas mark 7/ 200C fan oven for 15 minutes. Make this beetroot, onion and feta pizza recipe, no trimmings needed, just serve and enjoy!
TIP 1: It’s best to bake a pizza on an oven tray that has holes in it or directly onto the oven shelf. This helps crisp up the base as air can circulate around the pizza.
TIP 2: If you make your own pizza dough and have any spare, wrap it in cling film and refrigerate it overnight to use the next day.
