Deliciously fresh, this balsamic lettuce soup recipe makes a wonderfully colourful soup that has the fresh taste of the garden. Use any kind of fresh or limp lettuce, or salad leaves. A one-pot dish, the only fresh ingredients needed are lettuce, potatoes and onion.
Serves 2 as a lunch, or 4 as a starter
Ingredients
- Olive Oil 2 tbsp
- Onion 1 large, finely chopped
- Garlic clove 1, crushed
- Potatoes 420g, peeled and chopped bite-sized pieces
- Lettuce 300g, torn roughly
- Vegetable stock 700ml
- Balsamic vinegar 1 tbsp
- Fennel or dill, 1/2 tsp fresh or 1/4 tsp dried
- Salt and ground pepper, to taste
Method
Step 1
Heat the oil in a large saucepan. Then add the onion and sauté until softened but not browned.
Step 2
Add the garlic, potatoes and lettuce. Leave to sweat for a few minutes.
Step 3
Add the stock, bring to a simmer and cover for 10 minutes, or until potatoes cooked.
Step 4
Remove from the heat. Add to a blender to create a thick and smooth soup.
Step 5
Return to the saucepan. Add the fennel or dill along with plenty of salt and ground pepper. Initially stir in 1 tbsp of balsamic vinegar and taste. Taste for seasoning, adjusting to your taste.
