Honey Ginger Tofu and Cashew Nut Stir Fry recipe

Honey ginger tofu and cashew nut stir fry recipe makes a dish that is bursting with great flavours and textures. Tofu is a pressed bean curd made from soya that originated in China thousands of years ago. Packaged in water and stored in the fridge, it’s usually well-dated and can also be stored in the freezer. Its chewy texture and high protein content means it can replace meat in curries, stir fries and salads. Tofu contains all the essential amino acids your body needs. It also provides good fats, some carbohydrates and a wide variety of vitamins and minerals, including calcium. When marinated or added to a sauce, it will absorb flavours quickly. Most supermarkets sell tofu, and weight for weight it typically costs less than meat.

Serves 2-3

Ingredients

  • Firm tofu 400g pack, drained and pressed for at least 1 hour
  • Coconut oil 2 tbsp
  • Ginger fresh 1 tbsp grated or finely chopped
  • Chilli flakes 1/4 tsp
  • Garlic cloves 2, crushed
  • Onion 1, roughly chopped
  • Carrots 2, chopped or sliced
  • French beans handful, chopped into 2-inch lengths
  • Honey 2-3 tbsp, to taste
  • Rice wine vinegar 1 and 1/2 tbsp ps (cider vinegar works well too)
  • Soy sauce 1 and 1/2 tbsp
  • Cashew nuts 80g
  • Juice of lime 1
  • Coriander leaves
  • Salt and pepper

Method

Step 1

After the tofu has been pressed for at least 1 hour, slice into small chunks. Toss in a little oil and scatter a little cornflour over the pieces. Preheat the air fryer or oven to 220C/200C fan/gas 9. Start the tofu baking in the oven or air fryer for 20-25 minutes. Keep shaking them from time to time to stop them sticking to the air fryer or roasting dish.

Step 2

While the tofu is baking, prepare the vegetables. After about 10 minutes of tofu cooking time, heat the coconut oil in a large frying pan or wok. Fry the ginger, garlic and chilli flakes for 1 minute. Add the carrots, French beans and onion. Keep tossing the vegetables so they don’t stick to the pan.

Step 3

After about five minutes, add the rice wine vinegar, soy sauce and honey, making sure the vegetables are well coated in the liquid.

Step 4

Once the tofu is feeling crispy, add it to the stir fry pan. Stir in the cashew nuts, making sure the tofu and nuts are well coated in the sauce.

Step 5

Add the lime juice, seasoning and coriander leaves. Taste and add more honey if not sweet enough.

Step 6
