Jackfruit, once drained, flaked and cooked, has the same texture and appearance as pulled pork. This jackfruit burger recipe provides a delicious meat alternative and the burger wouldn’t look out of place at a barbecue. The added bonus is that it’s easy to cook, it can be bought tinned so stores for months in your cupboard, and is high in vitamin A and antioxidants.
Makes 4 burgers
Ingredients
- Tin jackfruit 400g, drained
- Red onion 1, thinly sliced
- Olive oil 1 tbsp
- Honey 2 tbsp
- Smoked paprika 1 tsp
- Mild chilli pepper 1/2 tsp, ground
- Garlic cloves 2, crushed
- Red wine vinegar 1 tbsp
- Soy sauce 2 tbsp
- Tomatoes 3, chopped
Method
Step 1
Preheat the oven 200C /180C fan/ gas 6. Squeeze the water out of the jackfruit chunks by hand. Then flake roughly with a fork.
Step 2
In an oven tray or dish, add the jackfruit, red onion and olive oil, mixing together. Bake for 15 minutes.
Step 3
Meanwhile, mix together all remaining ingredients in a bowl.
Step 4
Remove the jackfruit from the oven. Add the mixed ingredients and return to the oven for a further 15 minutes.
Step 5
Serve this jackfruit burger either warm or cold by filling a breadcake or burger bun. Delicious accompanied by chips, salad or roasted vegetables. Great as a meat-free barbecue alternative.
