For a quick and tasty light mid-week meal, make this courgette and carrot summer pasta recipe. The only fresh ingredients needed are courgette, carrot and onion.

Ingredients
- Courgette, chopped
- Oil 1 tbsp
- Chilli 1 small dried or fresh, finely chopped
- Onion 1 small, peeled and finely chopped
- Carrot 1, peeled and finely chopped
- Cream cheese, 3 tbsp
- Mint 1 tbsp dried or 2 tbsp fresh
- Salt and pepper, to taste
To garnish:
- Cheese, grated
Method
Step 1
Heat the oil in a frying pan and add the courgette, carrot and onion until softened.
Step 2
Meanwhile, bring the pasta to the boil in a saucepan of water and then simmer.
Step 3
Add the chilli and fry for 1 minute.
Step 4
Stir in the cream cheese and mint. Simmer gently until the pasta is cooked. Drain the pasta and stir in the courgette mixture. Season according to taste.
