Make this spiced carrot, lentil and coconut soup recipe where the only fresh ingredient needed is carrot, and these can be old and tired carrots. The lentils thicken this warming, spicy soup.

Ingredients
- Olive Oil 2 tbsp
- Cumin seeds 2 tsp
- Chilli flakes, pinch
- Carrots 600g, peeled and roughly chopped
- Red lentils 140g
- Vegetable stock 1 litre
- Coconut milk, 1/2 tin
- Lime 1, juice
- Salt and ground pepper, to taste
Method
Step 1
Fry the cumin seeds and chilli flakes in oil for 1 minute until they are fragrant.
Step 2
Sauté the carrots for a few minutes.
Step 3
Add the red lentils, vegetable stock and coconut milk. Bring to the boil and simmer covered for 15 minutes on the stove, or for 1-2 hours in the slow cooker.
Step 4
Once the lentils are tender, remove from the heat and add to a blender to create a thick and smooth soup.
Step 5
Return to the saucepan. Add the lime juice. Add plenty of salt and ground pepper, adjusting to your taste.
